How to make a healthy purple smoothie!

I thought I’d experiment around with different berries/fruits and ingredients as you do in hot summer weather and ended up making this purple berry smoothie – it’s very IMG_20170710_170304refreshing, healthy and easy to make! All you need is:

A handful of blueberries

A handful of blackberries

1 banana

2 large spoons of Greek yoghurt, or plain if you prefer

Half a cup of milk (use less if you want a thicker consistency)

(Optional) A tablespoon of mixed fruit/seeds – I just used a sachet of  mixed dry banana, dates and seeds from Tesco: https://www.tesco.com/groceries/product/details/?id=290596363

Simply wash and then mix everything in a blender thoroughly (cut the banana into smaller pieces), serve and enjoy!

STRAWBERRY AND BLUEBERRY SMOOTHIES!

Here is a very quick and easy recipe for blueberry and strawberry smoothies – a great combo! It looks great with a beautiful purply colour and tastes very summer-friendly and refreshing, while being full of vitamins! They’re also a great, healthy option for breakfast!

A handful of blueberries

A handful of strawberries

A splash of milk (less to increase thickness) and some yoghurt (optional)

Optional – some ice

Simply blend all together, pour into a glass and enjoy! 😀

HOW TO MAKE QUICK & EASY CHOCOLATE CHIP COOKIES!

Welcome 2016! For my first post of the new year, I thought I’d post a sweet recipe for some easy chocolate chip cookies 🙂

You will need: (Makes 6-8)

90g butterIMG_20160103_233847

90g caster sugar

150g self raising flour

1 egg/50ml milk

Chocolate chips (you can add your own variety here such as sultanas or dried fruit if you want a more healthier option!)

EQUIPMENT: Scales, baking tray, jug, mixing bowl, spoon, knife

METHOD:

  1. Weigh and put the flour and butter into a mixing bowl. Rub in the butter into the flour until it becomes like breadcrumbs.
  2. Add the sugar and chocolate chips/any other alternatives into the mixing bowl.
  3. If using an egg, crack it into a jug and mix with a fork or weigh out the milk.
  4. Gradually, add the egg/milk to the mixing bowl and use the knife to stir it together until it forms a soft dough. You may not need it all!
  5. Divide the dough into smaller balls and put them onto a baking tray, leaving space for them to spread. Press each one down so they are slightly flat.
  6. Bake for 12-15 minutes or until they are golden brown at 180c, Gas Mark 6.
  7. Remove from the oven once they are ready and place them onto a cooling tray.
  8. Leave them to cool before eating them! 🙂

How to make a simple and easy breakfast smoothie!

Smoothies for breakfast (or whenever you like!) can be so refreshing and so here is a really simple and easy recipe for one! There are endless variations in making them and you can get as creative as you wish! For this berry version all you need is:

Mixed berries  – I used frozen as not only are they far cheaper than fresh ones but taste just as good, as well as lasting longer.

Half a cup of milk

Single or double cream (optional)

Plain yoghurt – you could add any sort of plain yoghurt you’d like. Greek yoghurt would give the smoothie a nice texture but I only had the standard plain yoghurt 🙂

Simply blend everything in, and voila, a simple smoothie! 😀

HOW TO MAKE SIMPLE & EASY VEGETARIAN SAMOSAS

For some reason, I was really craving an Asian’s favourite today – somosas! I love the large vegetarian puffy ones (I know, great somosa terminology) but couldn’t find them anywhere and so here is a very simple recipe (and my firIMG-20151107-WA0019st on this blog) to make your own!

You will need:

For the dough: Water, self raising flour, salt, oil

For the somosa filling:

Potatoes

1 onion

Peas (you can add any other frozen veg if you want)

Optional – sweet chilli sauce for some savoury flavouring, or your favourite herbs/fresh crushed chilli

+ oil to fry them in

Instructions:

Add the salt to the flour, and rub the oil into it. Add water and knead into a stiff dough. Flatten the dough using a rolling pin.

Meanwhile, chop IMG-20151107-WA0012and fry the onion into tiny chunks.

Boil the potatoes and mash them with a potato masher or simply use a spoon, as I did.

Stir the peas into the mash once they have unfrozen as well as the fried onion. At this point, you can choose to add any herbs/spices to spicen the filling up. I simply added some sweet chilli sauce.

Using a somosa cutter, (or if you haven’t got one, then you can use a knife to make diamond cut outs) fill the centre with a spoonful of the mix and seal the edges with a fork. Note: These somosas will look best if you make them larger than typical ones as they will be softer!IMG-20151107-WA0018

Simply let them fry in some oil 🙂

You could even make your own chutney/sauce to compliment the somosas. I simply mixed mint, garlic and chilli sauces, but if you want to go the extra mile you could make a proper chutney with things like fresh chilli, crushed garlic, tomatoes or onions 😀
